Make Ahead Chia pudding
Did you know the word chia is a derivative of the word strength? Who doesn’t want to start their day with strength? I’ve been making chia pudding for a very long time. The absolutely beautiful thing is the versatility. You can take any vegan beverage and make the pudding: double chocolate almond milk, very vanilla soy milk, the vegan eggnog . . . I’ve even used my green smoothie. The possibilities are endless.
Chia seeds are a tiny superfood! Oxymoronic. Loaded with heart-healthy Omega fatty acids, fiber, calcium, zinc, iron and protein and so versatile, you can add a sprinkle to just about every breakfast here and in the other vegan breakfasts. My original recipe was shared here → chia recipe.
The recipe: 3 tablespoons chia seeds –> 1 cup of almond milk (or whatever you chose to use), put it in a mason jar and shake it. The seeds float . . . give it a good shake every so often.
Grains breakfast bowl
This is a bit different than just oatmeal, but certainly oatmeal can be part of the grains mix. A grains bowl is a texture explosion in your mouth. I have tried several mixes and didn’t exactly find one that I liked so I decided that on weeks that I want to have a grains bowl I will make quinoa, add leftover rice or barley and then add oatmeal or an oatmeal pouch that has a few different grains.
I like the Think Thin brand. I may add hemp seeds or chia seeds. It is very much a hodgepodge of using leftovers for breakfast. It can be sweet or savory. I prefer sweet! And I add fruit — Trader Joe’s has pitted dark sweet cherries that are to die for.
Waffle banana sandwich
I ate this sandwich almost every day during two pregnancies. It was quick, easy and filled me up. It is also a great on the go breakfast for one of my kids who is chronically late.
Super simple: Vegan waffle slathered with vegan peanut butter and ½ of a smashed banana.
Food does not need to be complicated. Keep it simple. In fact, the more simple, the healthier.
I mean less fresh ingredients not one bag of processed food . . . but you probably knew that.
Pancakes that are to die for!!!
1 cup flour
¾ cup of milk substitute. I used almond milk eggnog . . . heaven.
One tablespoon baking powder
½ teaspoon salt
Three tablespoons maple syrup/agave
Mix the dry ingredients first then add the milk and the agave/syrup. If the mix is too thick, add more liquid.
The first time I made these I used ¾ cup almond milk and the second time I used one cup coconut milk eggnog flavor. (Can you tell I have a thing for eggnog?).
I cook the pancakes in a cast iron skillet with Earth Balance “butter”. Sometimes I add organic wild blueberries from Trader Joe’s — the little tiny berries they remind me of picking blueberries on the shores of Lake Superior.
This is now my go-to pancake mix. The kids love it, AND it is a small batch which lets me make weekday morning pancakes if the kids ask.

Ann Arbor Vegan Kitchen is the place I go for great recipes. I know Vicki personally, and she is the real deal. Often when I go home, I have “open houses” at the hotel so I can see everyone and Vicki came. She gave me some phenomenal granola. Vicki, do you remember that?
